Togouchi Sake Cask Finish
Unique Blending and Aging Process
Togouchi Sake Cask Finish, produced by Sakurao Brewery & Distillery, is a blend of Scottish and Canadian whiskies. The aging process takes place in a unique 361-meter-long railway tunnel in Japan. This tunnel, dug in 1970, maintains a constant temperature of 14°C and 80% humidity, creating ideal conditions for whisky maturation.
Sake Cask Finish
After aging in imported Bourbon barrels, the whisky is transferred to sake casks for a finishing period of three months. This finishing process imparts a distinct character to the whisky. The result is a delicate nose with notes of vanilla, green apple, and malt. On the palate, it reveals lactic, woody, and fruity aromas, including white fruit. The long finish leaves scents of white fruit, spices, and malt.
Flavor Profile
Sake Cask Finish offers a rich and complex flavor profile:
Yellow Fruits: Enjoy notes of peach, apricot, apple, pear, and plum.
Cereals: Savor hints of barley, wheat, rye, corn, malt, and hay.
Baking: Delight in flavors reminiscent of pastry, butter, cookie, and custard.
Japanese Character
Togouchi whiskies embody a unique Japanese character, derived from the terroir and the pristine spring water used to reduce the alcohol content. This water is sourced from the heart of the Sandankyo natural park, adding to the whisky’s distinctiveness.
Aged and Blended in Japan
While composed mainly of imported whiskies, Togouchi Sake Cask Finish is aged and blended in Japan. The craftsmanship of the master blender ensures a high-quality product that reflects the art of Japanese blending.
