Our mezcal is made exclusively from 100% wild Espadin agave, harvested from the white and stony grounds of the Zapotec mountains in San Baltazar Guelavila, Oaxaca. This particular agave variety, scientifically known as Agave Angustifolia Haw, takes 8 years to reach maturity, ensuring a rich and complex flavor.
Traditional Production Methods
We adhere to ancestral production techniques to maintain the highest quality. The agave hearts are slow-cooked in a cone-shaped stone oven, using oak firewood. After cooking, the agave is ground in a horse-drawn mill. This traditional process, combined with natural fermentation using spring water, results in a mezcal that is free from chemicals and added flavors.
