Vinification Process

The process begins with freshly pressed Moscato must, which undergoes a slow fermentation in stainless steel tanks at controlled temperatures. This fermentation continues until the alcohol level reaches 5-5.5%. The wine then undergoes a second fermentation, known as “prise de mousse,” in sealed tanks at a lower temperature. This step allows the bubbles to develop naturally, resulting in a delicate, sparkling finish. Once the alcohol reaches 7%, the fermentation process is halted by reducing the temperature to 30°F. The wine is then filtered to remove any remaining yeast and transferred to a sealed tank, where it is prepared for bottling.
