Tsiakkas Exelixis is a refined white wine crafted with precision and passion in the high-altitude vineyards of Pelendri, Kato Milos. Grown at 1,200 to 1,440 meters above sea level, this blend benefits from the cool mountain air and complex volcanic, sandy, and clay soils. The ungrafted vines are trained using the traditional goblet method, and all grapes are handpicked to ensure only the highest quality fruit is used.
A Unique Blend of Indigenous and International Varieties
Exelixis brings together four carefully selected grape varieties: Promara, Sauvignon Blanc, Chardonnay, and Xynisteri. Each grape contributes its own character to the wine. Promara offers structure and depth, while Sauvignon Blanc brings freshness. Chardonnay adds body and complexity, and Xynisteri balances the blend with local elegance.
After a gentle cold soak, the must undergoes fermentation in French and American oak barrels. Selected yeasts are used to enhance aromatic precision. The wine is then matured for six months in oak, allowing it to gain subtle layers of flavor and texture.
