Production Process

Meticulously curated, the production of Bottega Prosecco DOC commences around mid-September, when the grapes reach optimal ripeness. Handpicked to prevent mechanical harm and premature oxidation, the grapes undergo a gentle pressing, meticulously separating the must from the skins. Following the Martinotti method, the initial fermentation takes place in stainless steel tanks, where selected yeasts work their magic. Subsequently, the second fermentation transpires in cuve close, ensuring a controlled temperature of 14°C, thus preserving the grapes’ primary aromas. The culmination of this process sees the wine undergo cold stabilization, filtration, and bottling, ensuring its pristine quality.
