Following hand harvesting, the wine undergoes alcoholic fermentation in temperature-controlled stainless steel vats and malolactic fermentation. The traditional cork-ageing method further enhances its aromatic depth. After at least nine years on lees, the Champagne is disgorged by hand, with a precise dosage of 5.5 g/L. Its production requires approximately 12 years, reflecting the patience and dedication behind this prestigious cuvée.
