Vinification Process
The winemaking process begins with the freshly pressed must of Moscato grapes. A small addition of Tempranillo red wine is incorporated to add complexity. Alcoholic fermentation starts slowly at controlled temperatures in stainless steel tanks. When the alcohol reaches 5-5.5%, the tanks are hermetically sealed, initiating a second fermentation, known as “prise de mousse.” This fermentation is carefully managed at a lower temperature. When the alcohol content reaches 7%, fermentation is halted by reducing the temperature to 30°F. The wine is then filtered to remove remaining yeasts before being transferred to a sealed tank and prepared for bottling.
