Our bush vines thrive on a 12.6% incline, rooted in alluvial soils rich in limestone—27.2% carbonates and 11.7% active limestone. These unique conditions produce grapes of remarkable character and complexity. The grapes are harvested by hand, then gently destemmed without crushing, preserving their integrity. Fermentation takes place in traditional clay amphorae, enhancing the wine’s purity and expression of terroir.
Vinification in Clay Amphora for Natural Elegance
Whole berries undergo a careful fermentation process, with daily moistening early on. Mid-fermentation, the grapes are lightly crushed and gently punched down each day. Malolactic fermentation follows in the same amphora, where the wine matures on its fine lees for seven months. This natural approach delivers a wine of depth, balance, and subtle texture.
