Williams & Humbert Dry Sack Medium Sherry

A Classic Medium Dry Sherry with Timeless Elegance

Williams & Humbert Dry Sack Medium Sherry is a celebrated gem from the D.O. Jerez – Xérès – Sherry region. Crafted using Palomino and Pedro Ximénez grapes, this blend reflects the rich legacy of Andalusian winemaking. Aged for over six years using the Solera and Criadera system, it develops remarkable depth and complexity.

Refined Craftsmanship, Authentic Origins

This medium dry sherry originates from vineyards in Pago Añina, Balbaína, and Carrascal — the heart of Jerez Superior. Only the first press musts are selected, fermented at 22°C and fortified to 19.5% ABV. The oxidative aging process occurs in American oak casks. Over time, the wine absorbs character, transforming into a balanced and aromatic expression.

Tasting Profile: Rich, Harmonious, and Slightly Sweet

Dry Sack Medium pours a brilliant amber hue. Its aroma is intense, evoking toasted nuts — especially walnuts. On the palate, it’s full-bodied yet smooth, with low acidity and a touch of sweetness. Each sip delivers a harmonious balance that appeals to a wide range of palates.

Versatile Pairing Options

This sherry shines when paired with blue cheeses, creamy pastas, and foie gras. It also complements spicy dishes, citrus desserts, and red fruit pastries. Whether served as an aperitif or dessert companion, it brings a sophisticated twist to any dining occasion. Serve it slightly chilled, between 12°C and 14°C, for optimal enjoyment.

A Storied Name in Sherry History

The name “Dry Sack” traces back to the 15th-century term “sack,” used for sweet sherries exported from Spain. When Carl Williams created this blend before World War I, he envisioned a medium expression — “not too sweet, not too dry.” Thus, Dry Sack Medium was born, and it remains a global symbol of quality sherry. It became especially popular in the U.S., even gaining fame for its iconic packaging — a “dry sack in a sack.”
