Careful Winemaking for Maximum Aroma
The winemaking process carefully protects the natural aromatic qualities of the Xynisteri grapes. After harvesting, the grapes spend approximately 12 hours in specially refrigerated chambers. They then undergo destemming and crushing, followed by a 10-hour pre-fermentation cold maceration at 8–10°C. The must is subsequently clarified before inoculation and the start of alcoholic fermentation.
Fermentation takes place at a controlled temperature of 14–17°C and lasts approximately 18–20 days. This careful temperature management helps preserve the wine’s fresh fruit and floral aromas while developing its characteristic texture and complexity.
