Carefully Controlled Winemaking
The grapes were harvested on 24 August and 3 September 2023. After picking, they remained for 12 hours in specialised refrigerated chambers to help preserve their freshness and aromatic character. The grapes then underwent destemming, crushing and a pre-fermentation cold maceration lasting 12–18 hours at 8–10°C.
After static clarification of the must, selected yeast was introduced to begin alcoholic fermentation. Fermentation took place at a controlled temperature of 15–16°C and lasted approximately 22–25 days. This careful approach helps retain the wine’s fresh fruit character and vibrant aromatic profile.
